The ingredients of a turkey sandwich served as a kabob! A great alternative for kids' lunches. Use coffee stirrers rather than kabob skewers for smaller kids or in lunch boxes. All the Kid Kritics wanted these for school lunch. Here are a few of their comments, "Tasted like a Subway sandwich… Felt when I ate it the world stopped for a few seconds…. Delicious!"

3 kabobs
1 slice multigrain bread (Suggested brand: Rudi's Organic Bakery)
Cut into six pieces12 leaves baby romaine lettuce
If the lettuce leaves are large, tear into 3-inch pieces.3 1-inch squares red bell pepper
6 1-inch cubes cooked turkey breast
6 1-inch cubes mozzarella cheese
Add ingredients to kabob skewers in the following order: bread, lettuce, turkey, cheese, lettuce, pepper, lettuce, cheese, turkey, lettuce, bread. Serve!
Replace sliced bread with pieces of whole grain rolls or gluten-free bread. Or leave out the bread all together. This sandwich can easily be adjusted according to taste preferences. Swap out mozzarella for cheddar and turkey for chicken or roast beef if you like. Use cherry tomatoes or olives instead of red bell pepper. The possibilities are endless!
