Creamy seafood salad with crab, shrimp, celery, onion, seasonings, and for added taste - Veggie Stix!
Mixing bowl, large resealable bag and rolling pin or food processor
20 minutes
4-6 people depending on ages
3-4 cups Veggie Stix by Good Health Natural Foods
Place in sealed plastic bag and crush with rolling pin. Or use food processor. Should yield about 2 cups of coarsly crushed Veggie Stix.1/2 lb cooked shrimp, chopped
1 lb cooked crab meat, chopped
4 stalks celery, diced
1 small onion, grated or minced
1/4 cup cilantro, finely chopped
Pinch red pepper flakes (optional)
1/2 cup organic mayo or Vegenaise
Pinch seasoned salt
Add all ingredients to mixing bowl and stir until mixed and fully coated. Add more salt or pepper to taste. Cover and refrigerate. Serve chilled with whole grain crackers, flatbread, or toast. Or serve on top of a green salad.
Replace mayo with Greek yogurt or sour cream. If crab is not available or too expensive, try scallops, other shellfish, or use all shrimp. Use sea salt rather than seasoned salt. If your family does not like the spice of red pepper flakes, try paprika instead - you'll be adding red color and extra nutrients without the spice or much added taste. Add 1 minced garlic clove or a dash of garlic powder. If your kids shy away from onion, try sweet onion or soak onion slices in ice water for 15-30 minutes before chopping.
