Food processor or blender, 2 mixing bowls, baking sheet

1 lb boneless, skinless chicken breast or tenders
Cut chicken breast into strips (chicken-tender sized pieces).1 heaping cup of Spelt Sesame Sticks, by Vita Spelt
Place in food processor or blender and process to bread crumb consistency.1 tsp garlic powder
1/2 tsp ground ginger
Mix processed sesame sticks with the garlic and ginger.2 eggs
1 Tbsp low-sodium soy sauce or tamari
In mixing bowl beat eggs with soy sauce. Set up an assembly line. Starting with the chicken tenders, dip each into the egg mixture then the sesame stick mixture to generously coat it. Place coated chicken on a nonstick baking sheet. Bake about 20 minutes or until chicken is thoroughly cooked. Serve warm.
Line cookie sheet with parchment for easy cleanup. Serve it with your favorite dipping sauce. For a veggie serving add marinara as a dipping sauce. Carrie suggested using teriyaki sauce, sweet & sour or honey mustard - watch for artificial ingredients and high sodium levels. Add parsley to the sesame mix before coating chicken. **Parsely will not only add green color, but also vitamin C, folate, vitamin K, antioxidants, and immune-boosting nutrients.
