1 can (14 oz.) wild salmonDrain salmon. Remove bones, if needed.
1 egg, large (free-range), lightly beatenIn mixing bowl, separate salmon with fork. Add egg. Mix together well.
6 whole grain crackers, crushed
1 tsp fresh parsley, finely chopped or 1/2 tsp dried
Dash of paprikaAdd cracker crumbs, parsley and paprika to salmon mixture. Mix together well until it becomes the desired patty texture. Add more crushed crackers if needed. Mold into patties.
1 Tbsp olive oil, extra virginAdd to saute pan and heat over medium. Add patties. Cook until golden on each side and cooked through.
Use leftover salmon fillets instead of canned. You can replace cracker crumbs with 1/4 cup whole grain or gluten free bread crumbs or oats. Try adding 1 Tbs minced onion or celery, 1 tsp. fresh lemon juice, 1/2 tsp oregano flakes or dill, and 2 tsp mustard. Serve on salad greens or as a sandwich on a whole grain bun with lettuce and tomato.
