This lasagna doesn't require browning meat or cooking noodles or sauce ahead of time! Easy to make and it cooks while you get other things done.
Slow cooker/crockpot, mixing bowl, cutting board and knife or food processor

4-5 hours on low
6-8 depending on ages
Small zucchini
Small yellow squash
Pulse in food processor or finely chop. Should be about 2 cups. Set aside.3 links (6 oz) Italian Turkey Sausage, no nitrates or nitrites added (such as Shelton's)
Pulse in food processor or finely chop. Set aside.1 egg (free-range if possible)
16 oz cottage cheese or ricotta cheese (organic if possible) **
1/4 cup freshly grated Romano cheese
1 cup shredded Mozzarella cheese (organic if possible)
1 tsp Italian herb blend
Whisk together or pulse in food processor to combine.25-26 oz red pasta sauce, reduced sodium
Add enough sauce to coat bottom of slow cooker pot.12 lasagna noodles, whole grain (we used brown rice pasta)
Add layer of 3 noodles, breaking as necessary to fit in slow cooker. Spread with 1/3 of the cheese mixture. Sprinkle with 1/3 of the veggies and sausage. Repeat layers 2 more times. Top with remaining pasta and sauce (add 1-2 Tbs water to the jar and shake to get all the sauce out).1 cup shredded Mozzarella cheese (organic if possible)
Sprinkle on top. Cover and cook on low 4-5 hours.
Adjust this recipe to suit your family. Swap out the squash with other veggies such as mushrooms, spinach, broccoli, bell peppers, etc... Try adding onion. Add more or less sausage if you'd like. Replace red sauce with pesto or white sauce. Too many ingredients? Try leaving out the Romano cheese, herbs (there are some in the sauce), and garlic. Too many layers? Add 4 noodles at a time and top with 1/2 the cheese and meat mixture. So many possibilities!
** If you are tyring to avoid stabilizers such as guar gum or carageenan, you may have better luck finding a cottage cheese rather than ricotta. You'll still need to look at the ingredients though. When cottage cheese is pulsed in the food processor it has a similar consistency to ricotta so you don't have to worry about the lumps scaring anyone away!
