1 bag Wide Spelt Noodles, White, Organic (Vita Spelt)
Cook spelt noodles as directed on the package.2 tsp extra virgin olive oil
1 pound chicken breast, cut into bite sized pieces
In a skillet, heat olive oil over medium heat. Add chicken and cook until juices run clear and no longer pink in the middle. Remove from pan and keep warm.1/2 tsp butter
2 cloves minced garlic
For sauce: Over medium heat melt the butter in the skillet. When the butter is melted add the minced garlic cloves and cook for a minute.1 1/2 cups fat free or lowfat milk (organic is best!)
2 Tbsp flour
In a bowl combine the 1 1/2 cups of milk with 2 tablespoons of flour. Make sure the flour is mixed into the milk well. Add the milk/flour mixture to the sauce pan with the butter and garlic. Cook over medium high heat until it just starts to boil. Stirring or whisking constantly until the mixture thickens. This should take about 5 minutes.1/3 cup grated Parmesan cheese
Add 1/3 cup of grated Parmesan to the sauce pan and stir it into the milk. Lower the heat to low and cook for about 5 minutes. Serve the Low Fat Alfredo Sauce over pasta. Also good over steamed vegetables.
Add fresh or frozen broccoli florettes or mixed vegetables to the pasta water for the last few minutes of cooking. Sprinkle parsley on top for color and extra nutrients! To save time, use leftover chicken from another meal.
Spelt is a great alternative to wheat pasta - higher in protein and easier to digest!
