4 ounces fresh spinach, chopped (organic if possible)
1 Tbsp chopped onion
1/2 tsp garlic, minced
1 Tbsp extra virgin olive oil
Saute in pan until spinach is cooked. Cool. Squeeze out extra water.1 cup cottage cheese (organic if possible)
Place in blender. Puree until smooth. Put into bowl.1 small carrot, grated
3 Tbsp Parmesan cheese, freshly grated
1/2 tsp Italian Seasoning, salt-free (pure herbs)
1/8 tsp paprika
Stir into pureed cottage cheese. Add spinach. Mix well. Refrigerate for 1 hour or more for flavors to blend. Serve chilled with sliced veggies, tortilla chips, and whole grain crackers.
You can also use frozen spinach - thaw, squeeze out extra juices. Quickly sauté with onion and garlic. Cool. Then mix into pureed cottage cheese mix. For a thinner blend, stir in organic milk, rice milk, or almond milk until reaches desired consistency.
