Oven to 350 degrees F
Glass baking dish, food processor, stockpot
15 minutes
45 minutes
4 or more depending on ages
1 1/2 cups fresh cooked or thawed chopped spinach (organic is best!)
Strain and dry thoroughly with paper towel2 eggs (cage-free)
4 cups Cabot Vermont Style Cottage Cheese
2 Tbs Parmesan cheese
1 cup part skim mozzarella cheese, shredded
1 tsp lemon juice
2 garlic cloves
Combine with spinach in food processor until thoroughly mixed through. Place mixture in zippered freezer bag and place in fridge.6 manicotti shells (whole grain)
Cook manicotti until desired consistancy or package directions. Place in baking dish giving each manicotti 1 inch of space. Take the cheese mixture out of the fridge and cut a nickel-sized corner off one side of the ziplock bag. Gently squeeze the mixture into each manicotti shell.1 jar pasta sauce (watch sodium & added sugars!)
Cover pasta with your favorite sauce and bake for 45min, add extra cheese on top if desired.
Add 1/2 tsp ground nutmeg to the cheese mixture - a "secret" Italian ingredient! If you would like to reduce the sodium in this dish, drain and rinse the cottage cheese in a collander before adding to food processor. Add 1 tsp oregano flakes or dried basil for richer flavor to sauce.
