1 cup mild salsa or fruit salsa
2 limes, juiced
1/4 cup brown sugar
1 Tbs Worcestershire sauce
1/4 cup orange juice
3 Tbs raw apple cider vinegar or lemon juice
1 Tbs dried oregano
Combine salsa, lime juice, brown sugar, Worcestershire sauce, orange juice, vinegar and dried oregano in a sauce pan. Bring to a low boil, reduce heat to low and simmer for 20 min or until sauce has thickened.1 small chicken, cut up or 2-3 lbs chicken pieces
While salsa is simmering, heat grill to medium heat or oven to 350 degrees F. Cook chicken until juices run clear. During last 10 min of grilling baste chicken with the salsa sauce.
To save money, buy a whole chicken and cut it up yourself. To save time, buy already cut chicken pieces or chicken breasts. Be sure to adjust cooking times according to size.
Marinate in lime, lemon or orange juice and olive oil for 1 hour for a more moist and flavor filled chicken.If you choose to bake chicken instead of grilling, place chicken pieces in a 9x13 baking dish and pour sauce over chicken. Cover with foil and bake at 350 degrees for 30 min. Remove foil, baste chicken with salsa sauce, and return to oven uncovered until juices run clear.
