The Kid Kritics loved this recipe and called it a "Taco Sundae" so we added that to the name.
10 inch skillet
5 minutes
15 minutes
4 or more depending on ages
1 Tbs olive oil
Heat over medium heat in skillet.1 lb Ground Turkey (Plainville Farms)
1 small onion, diced
Add to skillet and cook, stirring until turkey is browned.1 pkg Southwest Taco Seasoning Mix (Simply Organic)
Add to skillet and simmer 5 minutes. Remove from heat.Corn or whole grain tortilla chips
Place on the bottom of serving dish(es) and top with ground turkey mixture.1 cup reduced fat cheddar cheese (white), shredded
Add on top of warm turkey mixture so it melts!1 (15 oz) can kidney beans, drained and rinsed
1 tomato, chopped
3/4 cup mild salsa
1 avocado, sliced
Add the rest of the ingredients and serve. It's fun to let everyone put together their own "sundae" so you can serve all of the ingredients separately or arrange it all and serve on a platter. Either way, it's sure to be a hit!
Pile your Taco Salad Sundae on top of a bed of lettuce! If you prefer not to have your cheese melted, sprinkle it top of the "sundae" instead of on the warm turkey mixture. Add some fresh cilantro and a squeeze of lime for a flavor boost and some extra nutrients. If your family prefers spicier foods, add a dash of two of cayenne to the turkey mixture.
