preheat oven to 425
stand mixer or handheld mixer, parchment paper, cookie sheet, large mixing bowl

8 large scones
2 1/2 cups spelt flour
3/4 cup rolled oats (Karen used organic)
1 Tbsp baking powder
1/2 tsp sea salt
1/2 tsp baking soda
3 Tbsp sugar, divided
1 tsp orange zest
Preheat oven to 425. Line baking sheet with parchment paper or silpat liner. Combine flour, oats, baking powder, salt, baking soda, 2 Tbsp sugar, and zest in large bowl.6 Tbsp organic butter, room temperature
Add butter and beat until crumbly.1 cup buttermilk
Gradually add buttermilk.3/4 cup Wyman's of Maine Triple Berry Blend
Fold in berries. Knead dough 8 times on floured surface. Place dough onto baking sheet. Shape into 8 inch circle and cut into 8 sections. Sprinkle with remaining 1 Tbsp sugar and bake for 20 minutes.
You can substitute lemon zest for orange zest if you would like. These would also be delicious with Wyman's Frozen Wild Blueberries!
