Tuna Salad with Humbles by Melody     Print this Recipe

"This made a great school lunch for my son, and the scooping made it fun for him.  The Humbles were delicious, [my son] thinks they are potato chips and ate them in place of his usual [snack] for the crunch portion of his school lunch. I felt the crunch factor in the Humbles was right on and we will definitely be looking for some of the other flavors to try.  They also held up great for scooping, so he could eat them without my help." Instructions

  1. 1 can of light tuna (Tongol or Skipjack, if possible)

    Drain tuna and mash it up with a fork. Add to mixing bowl.
  2. 1 stalk celery, very finely chopped (organic is best)

  3. 1/3 cup red grapes (USA grown), cut in half or quarters (organic, grown in USA are best)

  4. 1 Tbsp organic mayonnaise, Lemonaise, or Vegenaise

    Add to tuna and mix. Chill if not serving immediately.
  5. 1/4 cup shredded cheddar cheese (white)

    Sprinkle on top of tuna salad just before serving.
  6. Humbles Baked Hummus Chips, Roasted Red Pepper (Good Health Natural Foods)

    Serve Humbles to scoop up tuna salad!

Options

Add your family's favorite ingredients to the tuna salad.  Try slivered almonds and parsley or other herbs.
