Preheat to 350 degrees F
Large bowl, saute pan, baking pan, rolling pin

1 lb ground turkey (raised without antibiotics)
2 Tbs minced onion
2 Tbs minced garlic (3-4 cloves)
1 egg (free range if possible)
Mince onion and garlic, alter proportion to your family's preference. I used 3 cloves of garlic. Add to meat and mix. Then break the egg and mix it into the meat mixture.1/2 cup Veggie Crisps, by EatSmart Naturals
Finely crush the chips (I used plastic sealed bag and a rolling pin) and add to the meat.3 Tbsp organic ketchup or tomato paste
2 tsp dried oregano or 1 Tbs fresh, chopped
Add to turkey mixture and mix well. Shape into balls using a cookie scoop or melon baller to ensure they are all about the same size and cook evenly.2 Tbsp extra virgin olive oil
Add oil to saute pan over medium heat. Add meatballs and sear edges for about a minute or two. Transfer to baking pan and place in the oven for about 15 minutes or until cooked through.
To save time, skip the step on the stove and just bake the meatballs in the oven. You can serve these with your favorite tomato sauce over whole grain pasta as a main dish. Or serve them with a toothpick as an appetizer. Kids love them with dipping sauce!
