This spread is so delicious! We recommend you make extra and refrigerate or freeze for later. You can even use it as a dip for pretzels, celery, carrot sticks, or other veggies! Don't forget the parsley and paprika. Both herbs are potent sources for Vitamin A and potassium. They don’t add much taste, but they do add antioxidant colors, green and red to this recipe! A great recipe to use up leftover turkey or chicken!
Food processor, knife
15 minutes
1-2 depending on ages
2 Tbsp all natural nut or seed butter (Suggested: Cashew Butter by Once Again)
2 Tbsp almond milk, unsweetened
2 tsp extra virgin olive oil
1/2 tsp teriyaki sauce (no corn syrup or artificial ingredients)
1/8 tsp minced garlic, or less if desired
Place in food processor. Blend until creamy.2 Tortillas (whole grain, sprouted grain, or gluten free)
4 slices turkey breast, plain roasted (no added nitrates)
Parsley flakes
Paprika
Coat each tortilla with 2 Tbs nut butter spread. Place sliced turkey on top of spread, leaving about 1 inch of tortilla exposed at top. Sprinkle lightly with parsley and paprika.2 leaves Romaine lettuce
Place on top of turkey. Roll up tightly away from you and slice into 3/4 inch pinwheels. Hold together with toothpicks or cupcake picks if desired. Serve.
Try with leftover cooked chicken or turkey. Some kids want their pinwheels sliced giving them pop-in their mouth appeal. Some want it to remain a whole roll that they can pick up and devour from end to end. Either way, it is fun finger food!
