This recipe was taste tested and Kid Kritics Approved at HealthBarn USA,which was founded by one of the Family Food Experts, Stacey Antine, MS, RD! The nachos and 2 other recipes were taste tested on the same day (Four Amigas Making Salsa and Fast Black Bean Dip). They were such a hit that parents asked for the recipes so they could make them at home! We hope you like them too.
300 degrees F
Shallow baking dish
15 minutes
10 to 15 minutes
4 to 6 people depending on ages
1/2 bag of Veggie Stix by Good Health Natural Foods
1/2 cup part-skim shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1 tomato, diced
1/2 cup black beans, drained
In a shallow baking dish, spread out Veggie Stix. Then start layering with the mozzarella cheese first, then beans, tomatoes and last the cheddar cheese. Place in oven just until cheese melts. Serve warm!
You can add shredded chicken or ground beef or turkey. Serve with sour cream, guacamole, and salsa for dipping! Sprinkle with cilantro or cumin. Add sliced black olives.
