A fun treat that's simple to make and perfect for warmer weather. Use any flavor Whenever Bar or ice cream. They're irresistible!
Ice cream scoop, butter knife or spatula
15 minutes
2 full-size ice cream sandwiches
2/3 cup ice cream or frozen yogurt (organic or homemade) **
Let sit at room temperature for 5-10 minutes to soften a bit (but not melt!)4 Oat Chocolate Chip Coconut Whenever Bars, by Pamela's Products
Flip 2 Whenever Bars upside down. Spread about 1/3 cup ice cream on each. Top with remaining 2 bars. Press down lightly. Place in the freezer to harden or serve immediately!
For younger children or smaller portions, cut bars in half before assembling. Use any flavor Whenever Bar. Substitute dairy-free ice cream if you'd like. Try different flavors of ice cream. To store them for longer periods of time, wrap individually in foil or cling wrap then freeze.
** It's best to use organic or homemade ice cream or frozen yogurt to be sure that quality ingredients are used. If this is not possible, watch out for artificial or junk ingredients before you buy.
