Bowl, medium saucepan, lid, potato masher or food processor
About 30 minutes
17-18 minutes
Makes approximately 5 cups
Juice of 1/2 lemon
Add lemon juice to bowl of water.3-3.5 lbs. apples
Peel, core and slice. Place into bowl of water with lemon juice.2 cups wild blueberry juice, 100% juice
In medium saucepan, add 2 cups of juice and simmer over medium heat until volume is reduced to half (Approximately 7-8 minutes). Drain water from apples and add apples to blueberry juice. Cook apples with lid on for 10 minutes or until tender.1/8 tsp. cinnamon
2 tsp. fresh lemon juice
Mash apples in pot with potato masher to desired consistency or place in a food processor if you prefer smooth applesauce. Stir in cinnamon and lemon juice. Store in sealed container in refrigerator.
For added blueberry flavor, add 1 cup to a full pint of blueberries into the juice as it cooks. With slotted spoon remove blueberries before you add apples. Place blueberries in fine sieve and mash over the juice in the pot. This way you get the lovely cooked juice of the blueberries without the skins. If you don’t mind the added texture, leave the peels on the apples and blueberries for color and more nutrients!
