Toaster oven, 325 degrees Fahrenheit
Toaster oven, medium mixing bowl
2-3, depending on ages
1 can tuna, dark in spring water (Skipjack or Tongol if possible)Drain well. Put into medium size bowl. Break (mash) into little pieces with a fork.
1/3 cup organic mayonnaise or Vegenaise
1 celery stalk, washed, finely chopped
1 tsp. seasoned saltStir into tuna until it is smooth.
4 slices Rudi's Gluten-Free Multigrain BreadSpread tuna mixture evenly on top.
1/2 cup shredded cheddar cheese, whiteSprinkle over tuna mixture. Cover with second slice of bread. place in toaster oven. Heat until cheese is melted. Serve warm.
Leave as open-faced sandwich using one slice of bread. Replace tuna with wild salmon or finely chopped chicken or turkey. Add lettuce, minced parsley and/or sliced tomato to the sandwich. Stir in finely chopped onion, chives, and/or dill.
